This hearty beef taco casserole is the perfect comfort meal that the whole family will love. It’s packed full of protein and fiber, which will help you feel fuller, longer (WIN!). This flavorful dish goes a long way, so it makes for a great meal prep also! I’m super excited with the way this one turned out & it’s honestly too simple & easy not to share. Hope you enjoy!

Beef Taco Casserole

  • 1-16 oz package of 93% lean ground beef

  • 1-15 oz. can black beans, rinsed and drained

  • 1-15 oz. can corn, rinsed and drained

  • 1-15 oz. can diced tomatoes, drained

  • 1 C brown rice, uncooked

  • 1 C skim mozzarella cheese, shredded

  • 1 packet low sodium taco seasoning

  • 2 garlic cloves, minced

  • 1 TBSP. olive oil

  • Garnishes: chopped cilantro, diced green onion

  1. Cook rice according to package instructions. Once fully cooked, set aside.

  2. Heat a skillet over medium heat, add garlic & 1 TBSP. olive oil. Once browned, add ground beef and taco seasoning.

  3. Add in corn, beans, diced tomatoes and rice. Mix well.

  4. Pour entire skillet into a 9x13 cooking dish & spread mixture evenly.

  5. Top with mozzarella cheese & bake at 350 degrees for 20 minutes or until the cheese is fully melted.

  6. Garnish with cilantro & green onion & enjoy!
