Peanut Butter Oatmeal Energy Bites


No Bake Peanut Butter Oatmeal Energy Bites. Loaded with old fashioned oats, peanut butter and chocolate chips. A balanced, protein and fiber packed breakfast or snack on the go!



These peanut butter oatmeal energy bites are no bake, super easy to make and take less than 5 minutes to put together. Loaded with protein, fiber and healthy fats to keep you full and give you a quick boost of energy throughout the day. Made with only 5 ingredients: old fashioned oats, creamy peanut butter, chocolate chips, almond milk and vanilla extract. Everything gets combined in one bowl. Best of all you never have to turn the oven on! You won't want to skip out on this recipe!





Peanut Butter Oatmeal Energy Bites



Ingredients:
  • 2 C old fashioned oats

  • 1/2 C creamy peanut butter (Kirkland brand works best because of it's consistency!)

  • 1/4 C semi-sweet chocolate chips

  • 1/4 C unsweetened almond milk

  • 2 tsp. vanilla extract

  • Optional: 1/2 scoop peanut butter protein powder


Directions:
  1. Combine all ingredients together in a medium size mixing bowl. It's best to use your hands for this one! ;)

  2. Form 2-inch size cluster balls with your hands and spread evenly on a parchment lined baking sheet.

  3. Freeze for at least one hour.

  4. These are best enjoyed 2-3 minutes after removing from the freezer.

Storage: I prefer to keep the clusters in a zip-lock bag in the freezer until you're ready to eat them. You can also store them in a zip-lock in the refrigerator but I find that storing them in the freezer helps retain their shape and won't fall apart as easily.
