Chunky Cucumber Salsa


Ingredients:
  • 2 medium size cucumbers

  • 2 Roma tomatoes

  • 1 orange bell pepper

  • 1/2 red onion

  • 1 jalepeno (deseeded if you prefer less spice!)

  • 1 TBSP. olive oil

  • Juice of 1 lime

  • Green onion, diced

  • Cilantro, chopped

  • Salt and pepper, to taste


Directions
  1. Prepare and chop all salsa ingredients into uniform-size chunks. To cut down on prep time (and make your life easier), I suggest using a food chopper like this one.

  2. Combine all ingredients together in a medium size bowl. Serve with hint of lime tortilla chips for an extra boost of flavor and crunch!
