Chunky Cucumber Salsa
Ingredients:
2 medium size cucumbers
2 Roma tomatoes
1 orange bell pepper
1/2 red onion
1 jalepeno (deseeded if you prefer less spice!)
1 TBSP. olive oil
Juice of 1 lime
Green onion, diced
Cilantro, chopped
Salt and pepper, to taste
Directions
Prepare and chop all salsa ingredients into uniform-size chunks. To cut down on prep time (and make your life easier), I suggest using a food chopper like this one.
Combine all ingredients together in a medium size bowl. Serve with hint of lime tortilla chips for an extra boost of flavor and crunch!
